I needed a hearty lunch add-on today, since I forgot to grab the larger lunch box out of the fridge this morning, and instead grabbed the tiny leftovers one.
I had some Trader Joe's low-sodium creamy tomato soup in tetra pack handy at my desk, and in the office kitchenette fridge I grabbed my TJ's frozen brown rice and chunky crumbled feta.
I put a cup of soup, half a cup of rice, and a heaping tablespoon of feta in a bowl and heated it for 1 minute. Stirred well. Delish.
Quick and healthy. And filling! Yum.
